The Simone or Simona, is an ancient cultivar that is found mainly in the territories of the Murgia dei Trulli and the Caves or Castellana Grotte, Conversano, Putignano, Alberobello and Monopoli. Although in the past it was widespread, over the years it has been replaced with cultivars with a higher yield. The oil obtained from it is a medium-intense fruity, clean and velvety taste that releases a delicate spicy note that enhances the finish.
It goes well with a swordfish roll, a creamed cod but also a good mushroom risotto.
